Citrus Peel Infused Water

A simple and refreshing drink using leftover citrus peels.

Ingredients:
1. Peels from 1 lemon, orange, or grapefruit, washed well
2. 1 litre cold water
3. Ice cubes
4. Fresh mint or basil, optional
5. Cucumber slices, optional

Method: Place the citrus peels in a jug with cold water. Add ice, mint, and cucumber if desired. Leave it to infuse in the fridge for at least 30 minutes before serving. This is a practical way to reuse citrus peels while creating a naturally flavoured summer drink without added sugar.

Citrus Pulp Summer Dressing

A light dressing that uses leftover citrus pulp after juicing.

Ingredients:
1. 2 tablespoons citrus pulp, from orange, lemon, or grapefruit
2. 3 tablespoons olive oil
3. 1 teaspoon honey or mustard
4. A pinch of salt and pepper
5. Fresh herbs, such as parsley or basil, optional

Method: Mix the citrus pulp with olive oil, honey or mustard, salt, and pepper. Stir well until combined. Use it over salads, grilled vegetables, couscous, or cold pasta dishes.
