Citrus Peel Iced Tea

 

A refreshing summer drink that makes use of leftover citrus peels.

 

Ingredients:
1. Peels from 1 orange or lemon, washed well
2. 2 tea bags, black or green tea
3. 1 litre of water
4. 1–2 teaspoons honey or sugar, optional
5. Ice cubes
6. Fresh mint, optional

 

Method: Boil the water and add the citrus peels together with the tea bags. Let it steep for 5–7 minutes, then remove the tea bags and peels. Allow it to cool, sweeten if desired, and serve over ice with fresh mint.

 

Citrus Zest Yoghurt Bowl

 

A quick breakfast or snack using citrus zest before the peel is discarded.

 

Ingredients:
1. 1 cup plain or Greek yoghurt
2. Zest of ½ lemon or orange
3. 1 teaspoon honey
4. Fresh fruit, such as berries, peach, or banana
5. A handful of oats, nuts, or seeds

 

Method: Mix the yoghurt with the citrus zest and honey. Add fresh fruit and top with oats, nuts, or seeds.
